Molino Roca Dinamita Rice
A round, pearly Valencian rice from Molino Roca, grown around the Albufera de València and similar to Bomba. It cooks in about 18 minutes, needs slightly less stock than Bomba, and stays loose and firm for hours afterwards. That makes it a good fit for dry rice dishes like paella. A traditional Valencian paella is made with chicken, rabbit and flat green beans, with a pinch of saffron.
