Burcol Caviar Lentils
Small, glossy black lentils that look a bit like caviar on the plate. They keep their shape when cooked, so they're brilliant in salads and as a bed for roasted fish or vegetables. There's no need to soak them: rinse, cover with cold water and simmer for around an hour.
