Whole summer truffles, Tuber aestivum, preserved in their own cooking liquid to lock in that distinctive earthy aroma. Milder and more affordable than their prized winter cousins, but still a good way to bring real truffle flavour to a dish. Best grated or sliced over pasta, eggs or a salad, or gently warmed through a risotto right at the end of cooking.
