Muti's take on a British classic, made without any vinegar at all, which opens up a much wider range of flavour than a traditional piccalilli. Turmeric and mustard bring the familiar colour and tang, with a gentle warmth from ginger and scotch bonnet underneath. Excellent alongside a cheddar sandwich or piled onto a charcuterie board.
Ingredients: Cauliflower, cabbage, mooli, carrot, rapadura sugar, green bean, onion, sea salt, red chilli, mustard powder, mustard seed, glutinous rice flour, turmeric root, ginger, scotch bonnet, spices.
