Muti Kimchi Chutney

A creative crossover from Muti in Bristol: a long-fermented kimchi base, cooked down with unrefined rapadura sugar and smoky chipotle into a thick, jammy chutney rather than a raw ferment. Vinegar-free, so the sweet-and-sour balance comes purely from the fermentation itself. Excellent with a cheese cracker, stirred into a BBQ glaze, or livening up a weekday rice bowl.

Ingredients: Kimchi (85%) (fermented cabbage, Chinese leaf, mooli, carrot, onion, pear, leek, sea salt, ginger, garlic and chilli flakes), rapadura sugar, glutinous rice flour, paprika and chipotle chilli.
